Egg free Vanilla Protein Pancakes!

Hey guys and girls!

This is my first ever baking/cooking post, so let me start off by saying, I will not preach. I cannot cook well. I cannot bake well. But I do like to randomly mix things up, especially when it’s good for me! After driving back from Chorley last week, I decided to pop into Home & Bargains to pick up some Vimto (oh juicy goodness) and got side tracked.

They have some amazing deals on protein powder! So I decided to make protein pancakes – but with no eggs! We’re using bananas to replace the binder of eggs.

What you need (makes 4 pancakes)

Two small bananas (or one big one, wink wink)
Vanilla protein powder
Baking powder
Soya milk
Salt
Oil
Honey & extra banana on top (optional!)

What you need to do

There is no point in me doing steps, because it’s easy as pie.

I blended the bananas, but you can mash them up instead if you want (shout out to Laila for giving me this tip to replace the eggs!). Then I put one and a quarter cups of protein powder and a tablespoon of baking powder into a bowl, mixing in the banana. I added a pinch of salt, then added soya milk to get this consistency.

Whilst doing this, get your frying pan on medium heat with a little bit of oil (believe me, you don’t need a lot!). When it’s hot, ladle the mix into the pan!

You’ll get 4 pancakes from this mix.

I also put the oven on a low heat and put the pancakes in there whilst I was making the others, so they stayed nice and warm.

Then I added some honey on top and bananas!
